Our olive groves are 80% based on AUTOCHTHONOUS CULTIVARS from SABINA
From 2016 we imported the Leccio del Corno cultivar from Tuscany
Some of these cultivars are pressed separately, giving rise to MONOCULTIVAR products.
Leccio del corno: native Tuscan variety. It has enchanted us with the high degree of polyphenols, giving life to an oil with a medium fruity taste, with quite significant bitter and spicy aftertaste.
Carboncella: autochthonous variety Sabina, with a medium fruity flavor, with the presence of large bitter aftertaste.
The collection of monocultivars takes place strictly by hand in the period of late October at lands above 500 m in height.
All our oils are strictly produced in organic farming; from 2019 the Sapora oil is also in possession of the DOP SABINA certification.
