It is with this philosophy that we oversee every stage of our extra virgin olive oil production. From olive grove care to bottling, every decision is driven by the desire to preserve the quality of the fruit and enhance its natural characteristics.
Care
Everything begins in the groves, where our olive trees are carefully nurtured. Pruning - a fundamental practice - is carried out using the polyconic vase training system, tailored to the specific cultivars. This method maintains the tree's natural balance, improves productivity, and enhances olive quality.
Every harvest is unique

Behind every bottle of olive oil lies 365 days of work, observation, and care. Climate, seasons, sunshine, rainfall, temperature, and humidity all shape the character of each harvest, making each harvest unique. For this reason, we follow nature rather than forcing it, using only inputs permitted in organic farming. Our goal is to respect the natural balance of the environment and the trees, allowing each harvest to express its own identity.
This is why no two harvests are ever the same: aromas, flavours, and nuances evolve over time, telling a story that renews itself with every harvest while preserving the values of our tradition.
SUSTAINABILITY AND INNOVATION
Tradition and innovation coexist in our daily work.
Our olive groves are monitored using Elasian, an advanced decision-support system that uses agronomic algorithms to help prevent the main olive tree diseases and optimise cultivation practices, from irrigation to plant nutrition.
This approach allows us to intervene only when necessary, reducing waste, improving tree health, and promoting increasingly sustainable agriculture.

From olives to oil

We harvest using electric shakers and, where necessary, by hand to preserve the integrity of every olive. The olives are then milled within 24 hours to retain all their organoleptic properties.
Extraction is performed exclusively through cold mechanical processes, a method that preserves the oil’s aromas, fragrances, and valuable nutritional components.
The freshly produced oil is stored in stainless steel tanks under nitrogen, a technique that limits oxidation and preserves freshness and quality over time.
Bottling is also carried out through a direct-flow system designed to protect the oil from unnecessary exposure to oxygen and preserve its freshness, ensuring every bottle preserves the oil's authenticity.
